Prep Your Pantry for the Heat of South America

It’s as synonymous with South America – Argentina, specifically – as the tango, malbec and Eva Perón (and packed with as much flavor and flair). A blend of fresh herbs and spicy red pepper tang, chimichurri sauce is a must-taste for any journey to South America. This week, Chef Jon Ashton is pairing it with sizzling steak – another Argentina favorite – for the ultimate weekend dinner to take you virtually to Buenos Aires. Like pesto and other tapenades, there is no one recipe one must stick to for the best chimichurri sauce. Green or red, spicy or mild, it’s up to you. Use it as dip or grilling marinade, spread it on bread or empañadas. There is no wrong way to enjoy the flavors of Argentina.

Green Chimichurri

Ingredients:

1 cup fresh flat-leaf parsley leaves
1/2 cup fresh mint leaves
1/2 cup fresh oregano leaves
1/2 cup extra virgin olive oil
3 tablespoons red wine vinegar
1 tablespoon brown sugar
1 teaspoon crushed red pepper flakes
8 cloves garlic
4 cuts of your favorite steak

Directions:

Combine all the ingredients in a food processor and process until smooth.

Place steaks in a large sealable bag. Add the chimichurri and turn to coat. Cover and refrigerate for at least 4 hours, overnight is even better. Remove the steak from the marinade and place on a plate 30 minutes before grilling.

Cook steaks on pre-heated grill until desired doneness. 

Smoky Red Chimichurri

Ingredients:

1 cup finely chopped fresh flat-leaf parsley
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons finely chopped fresh oregano
1 tablespoon smoked paprika
1/2 teaspoon crushed red pepper flakes
1 tablespoon brown sugar
3 cloves garlic, finely chopped
Kosher salt and freshly ground black pepper
Flat-leaf parsley leaves for garnish

Directions:

Combine all ingredients in a food processor and process until smooth.

Serve with cooked steaks, chicken, fish or really any protein. Add parsley as final garnish.
