Giving Tuesday: Culinary Team Makes Nearly 700 Peanut Butter & Jelly Sandwiches for Children’s Homes in Mexico

During their recent conference in Puerto Vallarta, Mexico, Holland America Line’s culinary team took time to give back to the local community. Holland America Line Vice President of Food and Beverage Frits Van Der Werff, Culinary Consultant and Master Chef Rudi Sodamin and several of the cruise line’s executive chefs spent hours making nearly 700 peanut butter and jelly sandwiches for three children’s homes in Jalisco: Refugio Infantil Santa Esperanza, Casa Hogar and Fundación Corazón de Niña.

“Thank you so much for the beautiful sandwiches and your generosity,” said Melissa Leigh Canez, president, Fundación Corazón de Niña, A.C. “Our children thoroughly enjoyed the treat.”

The team delivered the sandwiches to the three children’s homes during lunchtime and enjoyed seeing the impact they had on the kids.

Recipe: Chef Denise Vivaldo Makes Roasted Tenderloin of Beef on the Grand Asia & Pacific Voyage

On Oct. 1, Amsterdam departed San Diego for its epic 80-day Grand Asia and Pacific Voyage. Over the course of this cruise, a host of extremely talented guest chefs will be coming aboard to share their culinary knowledge, passion and delicious dishes with fortunate guests!

The first chef to join Amsterdam was Denise Vivaldo. Denise began her culinary training at the Ritz Escoffier and La Varenne in Paris and then graduated Chef de Cuisine from the California Culinary Academy in San Francisco. With over 28 years of experience, she has catered more than 10,000 parties and has cooked for renowned guests as George H.W. Bush, Ronald Reagan, Prince Charles, Bette Midler, Suzanne Somers, Cher, Arnold Schwarzenegger and Maria Shriver. She has also styled food for countless local and nationally syndicated television shows such as The Ellen DeGeneres Show, The Tonight Show with Jay Leno and NapaStyle with Michael Chiarello.

If you were unable to join Amsterdam’s Grand Asia Voyage, you can still get a taste of what our guests are experiencing with one of Denise Vivaldo’s personal recipes — Roasted Tenderloin of Beef with a Porcini Wine Sauce. Read on to create this delectable dish!

ROASTED TENDERLOIN OF BEEF

Servings:

Serves 8

Ingredients:

1 (about 4 pounds) prime center cut beef tenderloin

3 tablespoons extra virgin olive oil

1 tablespoon fresh thyme

Sea salt and freshly ground black pepper to taste

Directions:

Sear tenderloin, before you place in oven. Position rack in center of oven and preheat to 425 degrees F. Brush meat with olive oil and sprinkle generously with thyme, salt and pepper. Place in a baking pan and roast for 10 minutes. Reduce heat to 250 degrees F and continue roasting until desired doneness is reached: Rare for 35-40 minutes when it registers 125 degrees F on an instant read thermometer; medium-rare for about 45-50 minutes when it registers 130 degrees F.

Remove from oven and let meat rest for 10 minutes before slicing.

PORCINI WINE SAUCE

Servings:

Serves 8

Ingredients:

1 bottle Cabernet Sauvignon (4 cups)

3 tablespoons extra virgin olive oil

8 ounces porcini mushrooms, sliced

3 tablespoons shallots, minced

1 cup homemade or good quality beef stock

Salt to taste

1/2 cup (1 stick) unsalted butter, cut into chunks

Directions:

Place wine in a heavy saucepan and bring to a boil over high heat. Reduce heat to medium high and continue to boil until reduced to 1 cup, about 17 minutes.

In a large skillet sauté mushrooms in half of the olive oil over medium high heat until golden. Set aside. In the same pan sauté the shallots in remaining olive oil until soft, about 4 minutes. Stir in beef stock and reduced wine. Lower heat, add mushrooms and simmer for 5 minutes. Taste and add salt if necessary. Remove from heat. Gradually add butter while gently stirring sauce. Spoon sauce over tenderloin before serving.

Holland America Line Makes $25,000 Donation to Seattle Children’s Hospital as Part of K’s for Kids with the Seattle Mariners

Holland America Line Vice President, Public Relations Sally Andrews presented a check for $ 25,000 to Seattle Children’s Hospital’s Uncompensated Care Fund Saturday, Sept. 23, 2017, at the Seattle Mariners’ home game at Safeco Field. The company made the donation as part of its partnership with the Seattle Mariners Major League Baseball team and the K’s for Kids program that debuted during the 2014 baseball season.

With K’s for Kids, for each strikeout (represented as a “K” on a baseball score card) recorded by a Mariners pitcher at Safeco Field throughout the season, a cash donation was made to reach the $ 25,000 donation to Seattle Children’s Hospital. Andrews was joined on the field during the check presentation by 15-year-old Seattle Children’s patient and cancer survivor Annalise Haines.

“This year puts our total donation to Seattle Children’s Hospital through K’s for Kids since we began the program at $ 100,000, and we couldn’t be more proud to partner with an organization like the Seattle Mariners to make this program such a success,” said Orlando Ashford, president, Holland America Line. “Presenting the $ 25,000 check to a courageous superhero like Annalise on behalf of Seattle Children’s is an honor, knowing that it will go toward helping many other kids in need.”

For the past six years, Holland America Line and the Mariners have enjoyed a partnership that goes beyond the K’s for Kids donation. In addition, Seattle’s Hometown Cruise Line is the presenting sponsor of the Salute to Those Who Serve program honoring the men and women of the United States military. As well, the line sponsors Get Well Tours to area hospitals and the annual Fan Appreciation Night where two lucky fans at that game win Holland America Line cruises.

At 26 Mariners home games this season, the Salute to Those Who Serve program honored some of the men and women of the United States armed forces. During Friday and Sunday games, a member of the military (active, reserve, veteran or retired) was recognized on field for his or her service to our country. Each honoree received four tickets and one parking pass to the game. Holland America Line is the presenting sponsor of the program.

Vegetarian Recipe: America’s Test Kitchen Black Bean Burger Makes #FoodieFriday Fabulous

From the moment guests take a seat, they’ll feel as if they’re on the set of an America’s Test Kitchen TV show. The live cooking shows feature everything from tempting chocolate desserts to delicious meatless main dishes like a Vegetarian Black Bean Burger. Now you can make the recipe at home!

TIPS: The black bean mixture needs to be refrigerated for at least 1 hour or up to 24 hours prior to cooking. When forming the patties, it is important to pack them firmly together. Our favorite canned black beans are Bush’s Best. Serve the burgers with your favorite toppings or with our Chipotle Mayonnaise.

INGREDIENTS:
2 (15-ounce) cans black beans, rinsed 2 large eggs
2 tablespoons all-purpose our
4 scallions, minced
3 tablespoons minced fresh cilantro 2 garlic cloves, minced
1 teaspoon ground cumin
1 teaspoon hot sauce (optional)
1/2 teaspoon ground coriander
1/2 teaspoon salt
1/4 teaspoon pepper
1 ounce tortilla chips, crushed coarse (1/2 cup)
8 teaspoons vegetable oil
6 hamburger buns

DIRECTIONS:
1. Line rimmed baking sheet with triple layer of paper towels and spread beans over towels. Let stand for 15 minutes.
2. Whisk eggs and our together in large bowl until uniform paste forms. Stir in scallions; cilantro; garlic; cumin; hot sauce, if using; coriander; salt; and pepper until well combined.
3. Process tortilla chips in food processor until finely ground, about 30 seconds. Add black beans and pulse until beans are roughly broken down, about 5 pulses. Transfer black bean mixture to bowl with egg mixture and mix until well combined. Cover and refrigerate for at least 1 hour or up to 24 hours.
4. Adjust oven rack to middle position and heat oven to 200 degrees. Divide bean mixture into
6 equal portions. Firmly pack each portion into tight ball, then flatten to 31⁄2-inch-diameter patty. (Patties can be wrapped individually in plastic wrap, placed in a zipper-lock bag, and frozen for up to 2 weeks. Thaw patties before cooking.)
5. Heat 2 teaspoons oil in 10-inch nonstick skillet over medium heat until shimmering. Carefully place 3 patties in skillet and cook until bottoms are well browned and crisp, about 5 minutes. Flip patties, add 2 teaspoons oil, and cook second side until well browned and crisp, 3 to 5 minutes. Transfer burgers to wire rack set in rimmed baking sheet and place in oven to keep warm. Repeat with remaining 3 patties and 4 teaspoons oil. Transfer burgers to buns and serve.

ATK Black Bean Burger

CHIPOTLE MAYONNAISE
Makes about 1/3 cup

INGREDIENTS:
To give the flavors time to blend, we let the mixture sit for an hour before serving.
3 tablespoons mayonnaise
3 tablespoons sour cream
2 teaspoons minced canned chipotle chile in adobo sauce
1 garlic clove, minced
1/8 teaspoon salt

DIRECTIONS:
Combine all ingredients. Cover and refrigerate for at least 1 hour.

Holland America Line President Orlando Ashford presented a check for $ 25,000 to Seattle Children’s Hospital’s Uncompensated Care Fund Saturday, Oct. 1, 2016, at the Seattle Mariners’ home game at Safeco Field. The company made the donation as part of its partnership with the Seattle Mariners Major League Baseball team and the “K’s for Kids” program that debuted during the 2014 baseball season.

With “K’s for Kids,” for each strikeout (represented as a “K” on a baseball score card) recorded by a Mariners pitcher at Safeco Field throughout the season, a cash donation was made to reach the $ 25,000 donation to Seattle Children’s Hospital. Ashford was joined on the field during the check presentation by 6-year-old Seattle Children’s patient and cancer survivor Mason Nettleton and his family.

“As Seattle’s Home Town Cruise Line, Holland America Line is proud to make our third ‘K’s for Kids’ donation to Seattle Children’s Hospital through our partnership with the Seattle Mariners,” said Ashford. “It was an exciting baseball season with 1,318 home strikeouts, and we are honored to present a check for $ 25,000 to a young man as courageous as Mason that will go toward helping other kids like him at Seattle Children’s Hospital.”

Seattle’s hometown cruise line became the presenting sponsor of the “Salute to Those Who Serve” program honoring the men and women of the United States military.

In addition, this season the partnership also featured a radio sponsorship and the cruise line continued to sponsor “Get Well Tours” to area hospitals and the annual Fan Appreciation Night where two lucky fans at that game won Holland America Line cruises.
